Recipes for Rotisserie Ovens

To cook a chicken in a rotisserie oven and get the texture and flavor of store-bought rotisserie meat, there are several things you can do. First, remove the giblets. Then, truss and skewer the chicken and coat it generously with a dry rub made with 2 teaspoons paprika, 1 1/2 teaspoons dried thyme, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, freshly ground black pepper, and 2 tablespoons olive oil. Then, insert the rotisserie skewers into the rotisserie, and cook according to the manufacturer’s instructions. Once the chicken is cooked, let it sit for 10 minutes before carving and using it for other recipes.

Using 1 rotisserie chicken, Chef Bao developed two recipes that can be cooked simultaneously: a rotisserie chicken and vegetable casserole, and a rotisserie chicken salad.

To make the recipes, first, cut the chicken into pieces, debone it, and put the meat from the thighs and the breast in a separate container. The bones, the wings, and the back are the basis for the broth, alongside an onion, celery, carrots, peppercorns, and water. Let the broth simmer for two hours, then put it through a sieve. Separately, dice an onion and 2 garlic cloves, and cut some potatoes and some hot dogs into pieces. Melt 2 tablespoons of butter in a pan, then add the onion and garlic, 2 tablespoons of white rice, and pour in the broth. Add the potatoes and some dried oregano, a pack of frozen vegetables, the cut-up hot dogs, and the chicken meat from the thighs.

Let the casserole simmer for 15 minutes. For the salad, tear up a lettuce and cut up some cherry tomatoes and a cucumber. Mix the vegetables with the chicken breast and some walnuts. For the dressing, mix mayo, dried dill, dried parsley, mustard, lemon juice, olive oil, salt, and a couple of tablespoons water. Pour the dressing over the salad.

Another rotisserie chicken recipe comes from Chef Amanda Formaro. To start the Rotisserie Chicken Nachos recipe, you need to fill a large ovenproof skillet with tortilla chips.

Then, prepare the salsa by sautéing 1 large Jalapeno and 1 cup diced onion in olive oil for several minutes. Add 1 tablespoon minced garlic, then 1 can diced tomato, 1/4 cup fresh cilantro, 1/2 cup ground cumin, 1/2 teaspoon ground coriander, and 1/2 teaspoon chili powder. Simmer the salsa for 5-10 minutes. In the meantime, heat 1 can of refried beans and shred the chicken. Add the beans to the tortilla chips, layer the salsa over the beans, and the chicken over the salsa. Top it with 2 cups shredded sharp cheddar and 2 cups shredded pepper jack and bake in the preheated oven (at 450F) until the cheese is melted. Sprinkle with cilantro and red onion before serving.
