A Esrom and Lime Scrambled Eggss

A Little Background

It took my 9 year old daughter awhile to taste this after she first smelt the Esrom cheese but now she asks me to cook it every Saturday morning and it’s not good enough unless it is made with Esrom cheese.


What you'll need
1-2 tbsp finely diced bacon
2 tsp grated garlic
4 eggs
1 tbsp Esrom cheese
1 tbsp natural yogurt
2 medium kaffir lime leaves
2 dsp Japanese mayonnaise (secret ingredient) or 2 dsp low fat milk

What to do
Fry the bacon & the garlic for 2 minutes
Mix the eggs, cheese, yoghurt, lime leaves and mayonnaise in blender
When mixed add 2 tbl chopped parsley
Add to frypan
Cook until egg is just cooked
Season (eg. salt and/or pepper, or chilli, I like ground chilli)
Serve on whatever you like (we like toasted pumpkin bread)

Any cheese will do - we have tried it with good quality Vintage, Blue, Maasdam, Asiago, Havarti, etc.
