A Little Background
Tartare is a simplified jargon from chopped/minced "RAW" meat. It was many many years ago before fire was invented, we human being has been eating raw meat. This is may i say one of the oldest or the first human diets. Uncooked muscles are really tough and can't be chewed by human teeth, because of the fine muscle tissue that is developed in collagen. Therefore, particles such as salt, acid compound are added to breakdown the muscle fibers. This is called denaturing of protein. This particles also react to kill or deactivate dangerous bacteria exsist in animal muscle. Therefore it is safe to eat for us, human. In this recipe, lemon (acidic) is used to denature and kill dangerous bacteria in the salmon. Obviously, tartare need to be kept at a chilled temperature to furthur prevent any bacterial growth that may promotes food borne illness.
