A Little Background
Many chefs don’t enjoy the pastry section in a kitchen and often little thought is given to the last dish that your guests will eat. This recipe is adapted from a stunning lemon tart, but instead uses passion fruit. I get great satisfaction from watching the smiles on friends or customers faces as they recall the pleasure of biting into the just set passion fruit custard on the thinnest of pastry cases.
