A Little Background

Duck is the type of animal that attracts most humor and silliness; the word "duck" may have become an inherently funny word in many languages because ducks are seen as a silly animal and their odd appearance compared to other birds. Of many ducks in fiction, many are silly cartoon characters such as Donald duck and Daffy duck. However this recipe is not as funny as what it is stated above. In the culinary world, duck meat is a delicacy and loved by many chefs who cook them and by their guests who eat them. It is classified as a game bird with red meat that is classically cooked like steak (for breast). Nowadays, ducks are farmed and bred in domestic ways to compete with the high demand in the culinary business. Therefore, some chef does not classify duck as game meat, although depending on the species. Ducks use their legs to paddle in water and walk, therefore the leg meat is often tougher than the breast meat. Usually the leg meat is either confit or braised in low temperature for a certain amount of hours.
