A Little Background

Tunas are warm blooded, large predators that live in the open sea. It can weigh up to 680kg / 1499 Lbs and could swim up to 70 km/h in the ocean. Therefore the need of oxygen is constantly high and the muscles have a high content of oxygen-storing myoglobin pigment. This what makes tuna meat red to dark red with white muscular twitch fibres. Tuna is widely available around the world in accordance its different species. The most widely used are the skipjack, yellowfin and longfin tunas. Bluefin tuna are the most expensive and rare tuna among all costing hundreds of pounds per kg. Risotto (short grain rice) is grown in North Italy, it is used very widely in Catalan Dishes, such as Paella. It is used in the dish to make it more complex thus adding carbohydrates to accompany the fish. As Basil leaf comes from a mint family and has the same molecular structure, produces an astringent, minty, citrus kind of aroma which flavour much suite for refreshing thus contributing the chocolate flavour
