A Little Background
I have always been a fan of classical dishes. My memory of working with top class Michelin star chef preparing this simple dish always astonishes me. The secret to this simple recipe lies in obtaining the maximum flavour from the prawns. My way of preparing this prawn cocktail is to first marinate the prawn with a very good quality of olive oil from Liguria. Why olive oil from Liguria? The reason is, the olive oil that comes from this province gives end notes of apple and almond.
Rather than blanching the prawns in boiling salted water, where by theory you will have already wasted almost 20 % of the flavour, my method is to heat your oven at 180 ° C, when the oven reaches this temperature, just place the tray of the marinated prawns into the oven, give them 5 minute in this heat, take it out and serve at room temperature.
