A Little Background
My Indian friends with their flaming tastebuds never miss an opportunity to snigger about my fondness for traditional French homecooking. A good South Indian girl raised on pungent, fragrant and vibrant food led astray by bland, western FRENCH food. Yes, that was supposed to be me. To shut them up, I served them traditional, homestyle French food. What ends a perfect French meal more perfectly than Tarte au Citron! It’s refreshing sharpness and the surprisingly silky filling is the perfect end to any meal. As my Indian friends now know, the French do not live on cream alone. The recipe may seem a tad complex, but it is really simple if you have set up your mise-en-place. This lemon tart owes it’s success to Pierre Herme and his published recipe.
