A Little Background
Garlic pepper sauce is a common recipe in Thai cooking, and can be used with all kinds of fish, prawns, chicken, vegetables or even tofu. I am particularly partial to pouring it over silken tofu and vegetables and steaming the lot until the vegetables are tender. As with the majority of Thai cooking, it is all a matter of personal taste, and you may find that you like it with more fish sauce or sugar or even a squeeze of fresh lime over the top. This sauce is very practical and will keep well for a while in the refrigerator, so you might want to double or triple this recipe and store any left over sauce for later use. With a little of this sauce on hand, dinner could be as little as ten minutes away. The sauce tends to have a little heat to it due to the white pepper, so careful not to be too generous with it.
