A Little Background

This is a lovely dessert, that can be severed in many ways, at one place that I worked we would serve it in a large crystal bowl in the middle of the table, with a rich chocolate sauce, at an other we would set them in a mould, and now I am serving it with cinnamon and vanilla poached pears and pistachio biscotti.

I have used tinned pears in this recipe, this way I can make this dish all year round, when pears are in season I poach fresh pears and use them.
