A Little Background

This dish takes a little time to make but is well worth the effort. The flavours are fantastic especially when served with a crisp white wine. You can have the broth premade, and the raviolli assembled. Blanche and refresh the ravioli in cold water. Place them in a mixing bowl and toss with a small amount of olive oil, this will stop them from sticking. For dinner all you will need to do is reheat the broth and the ravioli. This way you are not spending too much time in the kitchen when you guests arrive for dinner.
