Chermoula
A.K.A Charmoula
A herb and spice marinate used in the North African cuisines of Morocco, Algeria and Tunisia originally mainly used for fish and seafood but these days also often applied to for chicken and meat dishes.
The basic ingredients of this spice-herb paste are herbs (mostly coriander), olive oil lemon juice, garlic and cumin; however, additions of salt, chili, black pepper, onion and even saffron are not uncommon.
