Granita

A.K.A Granité (French) Granita is a frozen, sugar syrup based and fruit juice, fruit puree or otherwise flavored dessert originally from Sicily/Italy. It is said that the Arabs introduced the art of making flavored ice as an refreshment. In general a granita, contrary to ice creams or sherbets, is not churned. The ingredients are mixed together and frozen in a container, stirring the mixture only occasionally. To serve the granita, the flavored ice is shaven or scraped off the with a spoon and served immediately. The name granita, obviously stems from granite the rock/stone and describes the actual state of the frozen mixture before shaving which is very solid and hard. These days, granitas are often served instead of a sherbet as a palate cleanser, on its own or as part of a dessert, or as a chilled/frozen garnish to a dish with cured or smoked product e.g. caviar with vodka-lime granita or champagne granita.
