Obatzta
Obatzta is a Bavarian cheese spread served as a snack with fresh Pretzels or farmers bread and accompanied by thinly sliced red radishes.
Typically Obatzta is made with 2/3 soft and ripe Camembert cheese and 1/3 soft butter and seasoned with paprika, mustard, finely chopped onion and some pilsner beer. Sometimes fresh cumin and chopped parsley is added as well.
“Baatz” in the Bavarian dialect/slang describes as much as a lump of dirt, clay or loam and the translation of the Obatzta as a name refers to the kneading or loosely worked together mass that is forming when the soft Camembert and butter are worked together with a fork. The spread should not be blended and smooth but rather coarse.
