Palate cleanser
In large, multi courses dinner menus, often a "palate cleanser" is served in-between courses, mostly ahead of the main course.
The palate cleanser is designed to give closure to the foregone tastes and dishes and let the diner, with this little “intermezzo”, start with a fresh and clean sense of taste the rest of the meal and following courses.
The palate cleanser can be a sherbet or granita, a small savory salad or even chilled or frozen vegetable juice or consommé.
