Clarified Butter
A.K.A. Drawn Butter
Clarified butter is the fat (oil) part of the butter after it has been separated from the milk solids through heating the butter to ensure separation (the milk solids will stay at the bottom of the pan). Clarified butter has all the flavor of butter, but due to the lack of milk solids, the burning point is much higher than regular butter.
