Guinea Fowl

A.K.A Perlhuhn (German) Pintade (French), Guinea Hen The guinea fowl belongs to the game birds in the same family as the pheasant and the turkey. The insect and seed eating bird originally came from West Africa and resembles the partridge, but has no feathers on the head and a grey fine feathered body with with white dots. There are quite number of different species, but mainly the helmeted guinea fowl has been domesticated and is grown outside it's traditional habitat for it's great tasting meat. Although the guinea fowl belong to the game birds, it's meat is tender and white just lie chicken. The taste, while not distinctly gamy, does have that special game flavor one is looking for in pheasants or other birds. They grow to a size of up to 1600 g per carcass and have a ratio of 50/50 carcass-meat yield.
