Simmer

Cooking a product in gently in hot water or liquid just below the boiling point. Simmering is a "low heat" cooking process and typically the liquid releases small bubbles from the bottom of the pan which are slowly rising to the surface. Ideally these small bubbles break before they even reach the surface so the liquid or water never boils.
