Chiffonade

Chiffonade is the French term for a cut of leafy vegetables or herbs. Individual leaves are stacked onto each other, then tightly rolled and cut across the roll as fine as possible into long thin strips. Chiffonade is mostly either eaten raw, as salad, added to hot cream soups as the garnish or in the case of herbs, sprinkled over the product as falvouring.
