Steeping
Steeping refers to the process of soaking a product or ingredient in water in order to extract, cleanse or soften it.
Ham or salted cod that is soaked in water after the salting process, dried pulses before being cooked, or wheat in preparation to be germinated are typical examples.
The term can also be used if a product is submerged in a flavoring liquid and infused in that way.
