Offal

The edible internal organs of a carcass. They are usually removed prior to the carcass being cut up. Some popular types are, tripe; the stomach lining of cattle, kidneys, liver, tongue, lungs, spleen, brains and sweetbreads; the thymus gland of calves and lambs . Offal may also some times refer to certain extremities of an animal; pigs trotters and certain parts of the head. Offal has for many years been popular in many parts of Europe and Asia and is now experiencing a revival in new world cuisine.
